今年の梅干し
今年も梅干しをつけたぞ〜。梅干しつくりはじめて７〜８年。おととしからは毎年１０kgずつ漬けています。今年もまた、と10kg箱で買ってきました。去年にくらべると随分安くなっていたけれど、その分（？）、ちょっと傷みが入っているものが多く、つけたのは７kg、残りはすぐ火を通してジャムにしてしまいました。まずは1晩水につけて、ヘタをとってから１粒ずつふきんでふいて、焼酎をまぶして、塩をまぶして、、という手順をふむのですが、水につけた時の梅の感じがなんとはなし例年と違うような、、。思いすごしだといいのだけれど。毎年1回しか作らないから、詳しく覚えていないんですよね、、。７kgの梅干にカビはやしたら悲しすぎる。
ウチの梅干しは、昔ながらのやり方。弁当に入れるので、防腐効果がないと困るから、しっかり塩味１３、５％。
