鹿肉レシピ

　今日は、朝から某雑誌の特集のための鹿肉料理の試作。レストランで食べたことはあるけれど、さすがに料理するのは初めて。臭い、固いというけれど、撃ってすぐに冷凍して送ってもらっているせいか、匂いはまったく気にならない。朝ご飯の片づけしてから、さあやらなくちゃ、と始めたのだが、昼になる前に、試作＆試食ですっかりお腹いっぱい。それもなんだか、お腹のあたりからもわ〜んと体があったかくなってくるんだけれど、これは気のせい？

コメントず〜いぶん遅くなってすみません。鹿肉一番簡単なあたりでは、薄切りにして鶏の唐揚げのように下味をつけたあと、片栗粉をまぶしたら、めん棒などで薄くのして油であげると、パリパリ揚げ。ビールのつまみにおいしいですよ。煮込みなどの場合は、脂がすくないために３〜４時間は煮ないと柔らかくならないので、家庭で作る人は趣味的じゃないとやる人は少ないかなあ、と思います。というわけで、まずはパリパリ揚げ。いかがでしょうか。
