手作り甜麺醤
午前中、某雑誌の鹿肉料理の撮影。今回はいろいろ試作して楽しんじゃいました。結局そのうちの３品しか登場はしないんだけれど、、、。薄く切って、パリパリに揚げる、オイスターソース炒め、デミグラス味のシチュー、ソテーのカシスソースなどなど。その中で、北京ダック風の料理を作ったのですが、せっかくなら甜麺醤を手作りしてみようっと思い、やってみました。八丁味噌と砂糖と水とゴマ油を煮詰めて、、というのが普通の作り方らしいのですが、それではあまりにも芸がないので、そこに、シナモンと八角と花椒を加えて作ってみたら、ほのかにスパイスが薫って、いい感じの仕上がり。冷蔵庫でもしばらくもちそうなので、いろいろ使ってみようっと。
