鹿料理三昧
以前に雑誌の仕事で鹿料理を作っていたことはここにも書いた。実は、送ってもらった量が半端じゃなく、まだ２kgはあるだろう塊が冷凍庫に残っていたのだ。夫が鹿で作ってみたい料理があるというので、おまかせ。ひとつは赤ワインで煮てシチュー、もうひとつは、パパイヤでマリネしてから炭とクローブを入れて蒸し焼きするインド風。シチューは、ステーキっぽく仕上げた肉とじっくり煮込んだのと２種類が入り、食感の違いもある。なかなかの美味。インド風は、２０分しか火をとおしていないというのにすごく柔らか。でも不思議な食感。これはパパイヤのタンパク分解酵素のせいなんだろうけれど、、、。インドの食の知恵はすごい
で、また「こんなに肉たべきれないよね」で、急遽友人に声をかけて、２人男性が遊びにくることに。そうしたらまた息子も２人友達をつれてきて、こちらはお泊まりということに。
この晩のメニュー。ご飯、ほうれんそう、舞茸、松の実、レーズンが入ったキッシュ、鹿料理二種、さっぱりコールスロー、夫の手作りパン（土曜日から発酵させてた）、焼きりんご（小布施から取り寄せた紅玉が箱で届いたので）。ワイン、結局４本あいてしまった。焼きりんごは、子どもたちに大好評で（この間作っていたキャラメルソースをかけたらなかなかこれがよいのであった）、今朝もまた焼くはめに。朝食後のおやつ。
